Medium mixture tending to loose, with good skeleton, red earth rich in iron, with tufaceous layers residual of little consistency
In stainless steel tanks at controlled temperature (21-23° C), from destemmed and crushed grapes.
Maceration on the must for 5 weeks with frequent pumping-over.
Use of autochthonous yeasts, malolactic fermentation by autochthonous bacteria.
Wine refined using clarifiers of vegetal origin (Biovegan)
6 months, in American oak barriques
At the view, the garnet color recalls the lightweight wooden step of the wine.
At the nose is quite intense, with hints of carob, plum jam, vanilla and a lightly toasted.
Primitivo Mandurino is a dry wine. On palate is full and warm: the softness is given by slight residual sugar, quite fruity, with soft tannins.
The two years of aging in bottle give at the wine more structure, balance and maturity.
