the Medium mixture is tending to loose, with a good presence of skeleton.
Red earth is rich in iron with a few remaining tuffaceous layers of little consistency.

In steel containers at a controlled temperature (21-23° C) from destemmed and pressed grapes.
Maceration of grapes on the must for 6 weeks with frequently pumping and different delestage.
Use autochthonous yeasts, spontaneous malolactic fermentation. Wine refined with the only clarifier of vegetal origin (BioVegan).
12 months in Barrique and an additional 20 months of aging in steel storage bin at a controlled temperature.
Bottled on July 27, 2015 (Limited edition: the number of produced bottles around 6000).
At the view appears as an elegant garnet red, at the nose as a scent of aging in barrique on which lies the typical primitive aromas:
morello cherries in brandy, carob, plum jam and spices.
In glass leaves space at a floreal violet note.
In the mouth, it is soft and has a pleasant flavour with well-advanced tannins and a high flavour.
It is a meditation wine and also good combined with typical pasta dishes of Apulia tradition and harmonizes very well with a succulent second course.
